gbuild: document what CFLAGS/CXXFLAGS etc. *actually* do
Looks like following GNU build system standards isn't necessarily the
best idea, if even the documentation gets it wrong.
Also document the ENVCFLAGS/ENVCFLAGSCXX variables.
