EPUB export: allow setting custom metadata explicitly
If not set, fall back to the existing auto-find. The testcase now
asserts that the priority is:
- api
- if that is not set, then xmp
- if that is not set, then doc
(And at the end libepubgen itself has some defaults as well.)
